Eingelegtes Gemüse

Ein schnelles Rezept, welches nur sehr wenige Worte als Einleitung benötigt.
Aber seht selbst… 

Eingelegtes Gemüse

Benötigt wird:
♥1 Zucchini
♥1 große Zwiebel
♥2 Paprikaschoten (gelb, rot)
♥2 EL Zucker
♥50ml Öl +1 EL Öl
♥50ml Essig
♥200ml passierte Tomaten
♥2 Knoblauchzehen
♥2 EL Kräuter, getrocknet (z.B. Rosmarin, Oregano…)
♥1/2 EL Salz
♥1/2 EL Pfeffer
♥1 TL Paprikapulver, scharf

Außerdem:
♥2-3 Gläser mit Schraubverschluss, steril

Zubereitung:
Zucchini und die Paprikaschoten waschen, säubern und kleinschneiden. Die Zwiebel schälen und in grobe Würfel schneiden. Die Knoblauchzehen schälen und fein hacken. In einen Topf den EL Öl geben und darin kurz das Gemüse anbraten. Das restliche Öl, passierte Tomaten, Zucker, Essig und die Gewürze mit in den Topf geben und 15 Minuten auf niedriger Stufe köcheln lassen. Anschließend die Kräuter hinzugeben und für 10 Minuten weiter köcheln lassen. In sterile Gläser abfüllen und gut verschließen.

Das Gemüse ist gut verschlossen und dunkel gelagert gut 4 Monate haltbar.
