Ich habe mir vor Ewigkeiten mal etwas Matcha gekauft, nur zwei mal für ein Matcha-Latte benutzt und dann in dem Kühlschrank verstaut. Zu schade für diese eigentlich tolle Zutat. Nach einigen Experimenten ist etwas tolles draus entstanden.

Matcha-Apfel-Pancakes sind für euch die idealen Pancakes, wenn ihr mal etwas Neues ausprobieren möchtet und ihr den Geschmack von Grünen Tee gerne habt. Die Pancakes sind nicht zu süß und schmecken ausgezeichnet.

Matcha-Apfel-Pancakes (vegan)

Ich stelle meine Pancakes ohne Haushaltszucker her, was wirklich nicht schwer ist oder großartig auffällt.

Für 5-6 Stück.
Folgende Zutaten werden für den Teig benötigt:
150 g Mehl
250 g Pflanzendrink z.Bsp. Mandelmilch
1 EL Kokosblütenzucker
1 EL Backpulver
Prise Salz
1 TL Matcha
1/2 TL Vanilleextrakt

Außerdem:
1 Apfel
etwas neutrales Öl
Reibe
Pfanne

Zubereitung:

Alle Teigzutaten miteinander vermengen.

Den Apfel waschen, das Kerngehäuse entfernen und klein raspeln.

Eine Pfanne mit 2-3 EL Öl aufsetzen und erwärmen.

Etwas Teig in die Pfanne geben, noch solange die Oberseite feucht ist ungefähr 1 EL Apfelraspel drauf verteilen.

Vorsichtig wenden und auch von der anderen Seite ausbacken. Auf einem Kuchenpapier zum Abtropfen geben und den weiteren Teig nach für nach zu Pancakes verarbeiten.

Die Pancakes gleich servieren oder sie noch mit etwas Sirup (Ahornsirup oder Agavendicksaft) beträufeln.
