Manche mögen ihn weich, andere wiederum fester. Locker, zusammenklebend, gelb oder weiß.
Es geht um Reis. Nicht irgendeinen Reis, sondern einen guten Reis. Wenn es um Reis geht bin ich nicht schnell zufrieden zu stellen. Einige Rezepte habe ich schon im Thermomix ausprobiert. Nicht immer entsprach er meinen Vorstellungen. Mal war er noch total fest, also nicht vollständig gegart und beim nächsten Mal war er so weich, dass er als Pudding durchging. Nicht nur die Konsistenz ist wichtig, sondern auch der Geschmack.

Am liebsten esse ich griechischen Zitronenreis. Wer mich liest oder meine Videos verfolgt der weiß, dass Zitronen Dauergäste in meiner Küche sind. Früher habe ich den Zitronenreis im Topf gekocht, heute wird er im Mixtopf zubereitet. Kurz bevor ich den Thermomix bekommen habe, habe ich überlegt mir einen Reiskocher zu kaufen. Für mich hätte sich der Kauf auf jeden Fall gelohnt, aber durch den Thermomix habe ich den Gedanken schnell verworfen, denn er ist jetzt mein liebster Reiskocher. 🙂 ❤

Griechischer Zitronenreis (vegan)
 
Als Beilage für 4 Personen.
Als Hauptmahlzeit für 2 Personen.
Folgende Zutaten werden benötigt:
1200g Wasser
1 TL Zitronenpfeffer (notfalls ginge auch normaler Pfeffer)
1 EL Gemüsebrühpulver oder Paste
eine mini Prise Zucker
eine Scheibe einer Bio-Zitrone
300g Reis
Zubereitung:
 
Wasser, Salz, Zucker, (Zitronen-)Pfeffer, Olivenöl und Gemüsebrühpulver (oder Paste) in den Mixtopf geben.
Den Reis ins Garkörbchen geben und gründlich mit warmen Wasser spülen, ungefähr 30 Sekunden.
Das ist wichtig damit der Reis nicht klebrig wird.
Das Garkörbchen in den Mixtopf setzen. Der Reis sollte nun in Flüssigkeit stehen, wenn das nicht der Fall sein sollte gebt ihr noch etwas Wasser hinzu. Die Zitronenscheibe auf den Reis legen.
Wer Zitronen so sehr liebt wie ich, der kann auch gerne eine halbe bis ganze Zitrone kleinschneiden und auf den Reis geben. Mit einer Scheibe schmeckt der Reis nur sehr mild nach Zitrone.
Den Deckel auf den Mixtopf setzen.
Ungefähr 20 Minuten /100°C/ auf Stufe 4 garen.
Je nach Reissorte kann die Garzeit variieren. Ich habe Langkornreis verwendet.
Den Reis noch heiß servieren. Traditionell mit einem Minzjoghurt.
 
Für den Minzjoghurt werden einfach 200g (Soja-)Joghurt mit 1-2 EL getrockneter Minze und etwas Salz zusammengerührt. Schmeckt frisch und erweckt bei mir die Erinnerung an wunderbare Momente und Jahre in Griechenland.  ❤
Schnelle Paprikapaste/Ajvarpaste (vegan)
Schmeckt schön nach Paprika, nicht zu scharf und hat richtig Biss.
Durch die Sonnenblumen- und Pinienkerne wird die Paste schön
aufgewertet und bekommen einen ganz besonderen Geschmack.
 
Für 1 Glas.
Folgende Zutaten werden benötigt:
1 Zwiebel
70g Sonnenblumenkerne, geröstet
70g Pinienkerne, geröstet
90-100g Ajvar
20g Tomatenmark
Salz
Pfeffer
Zubereitung:
