Thermomix-Thursday #60 -Griechische Olivenpaste

Beim Durchgehen meiner griechischen Rezepte ist mir aufgefallen, dass ich euch noch gar nicht von meiner Olivenpaste berichtet habe. Das wird nun ganz schnell nachgeholt, denn sie ist soooo gut!

Die Paste lässt sich gut herstellen und sie ist wochenlang -wenn man sie mit Olivenöl bedeckt im Kühlschrank lagert- haltbar. Egal ob selbst behalten oder verschenken, auf dem Tisch macht sie sich immer gut.

Griechische Olivenpaste (vegan)
Πατέ ελιάς ( Pate Elias)

Für ein Glas.
Folgende Zutaten werden benötigt:
150g schwarze Oliven
40g Kapern
etwas Pfeffer
etwas (Meer-)Salz
1 TL Zitronenschale
20 – 30 g Olivenöl

Außerdem:
Steriles Glas

Zubereitung:

Die Oliven entkernen. Oliven, Kapern, Pfeffer, Zitronenschale und (Meer-)Salz in den Mixtopf geben. Für 10 Sekunden /-/ auf Stufe 6 zerkleinern.

Das Olivenöl hinzugeben -ich verwende anfangs immer 20 g und erhöhe dann je nach Konsistenz der Paste auf 30 g- und wieder für 10 Sekunden /-/ auf Stufe 6 alles verrühren lassen.

Die Paste in ein steriles Glas abfüllen und servieren.
Mit Olivenöl bedeckt ist die Paste mehrere Wochen haltbar.

Wer keine Kapern mag, der kann diese durch Oliven austauschen. auch mit grünen Oliven schmeckt die Paste sehr gut.

Wer vegane schwarze Oliven kaufen möchte, der sollte darauf achten, dass die Oliven nicht mit Tintenfischtinte eingefärbt wurden.

Ich kaufe nur ungerne entkernte Oliven und mache mir die Arbeit und entkerne sie selber. Das dauert zwar eine kleine Zeit, aber der Geschmack ist viel aromatischer.
