Espresso-Verpoorten-Mousse mit Cranberrysauce

Vor einigen Tagen erhielt ich, wie wahrscheinlich viele andere Blogger auch, eine Mail von Verpoorten, dass Tester ihres Produktes gesucht werden. Man musste sie lediglich mit seinem Blog „registrieren“ und anschließend werden 111 Blogger auserwählt. Ich war unter den Auserwählten dabei, habe mich auch sehr darüber gefreut und mir schon einige Ideen, was ich mit dem Eierlikör machen könnte, durch den Kopf gehen lassen. Nur leider kam bis heute kein Paket an. Also schickte ich meinen Mann los eine Flasche zu kaufen, denn gute Ideen müssen umgesetzt werden! 😉

Als ich dann die Flasche in den Händen hielt ging es los. Erstmal musste der Eierlikör verkostet werden, also goß ich mir ein Stamperl ein…schmeckt ganz gut, brennt etwas im Hals, aber dafür das ich selten Alkohol trinke, ich koche lieber damit ;D war es ganz gut. Nun mussten im Kopf Aromen zusammengesetzt werden. Ich wollte etwas fruchtig-aufregendes, welches man auch super den Gästen präsentieren kann. Es sollte klein, fein und schmelzend auf der Zunge sein. Es sollte einfach herzustellen sein aber großen Eindruck schinden.

So wurde die Idee also zur Kreation… ♥

Espresso-Verpoorten-Mousse mit Cranberrysauce
 

Für 8 Portionen:
Folgende Zutaten werden benötigt:
 
Espresso-Verpoorten-Mousse:
♥4 Eigelb
♥100g Zucker
♥2 EL Espressopulver
♥125ml Espresso, frisch gebrüht
♥4 EL Verpoorten (Eierlikör)
♥250g Sahne
 
Cranberrysauce:
♥60g Cranberries
♥Saft einer halben Zitrone
♥etwas Vanillemark
♥2 EL Zucker
♥100ml Sahne
 
Außerdem:
♥Sieb
 
Zubereitung:
 
Espresso-Verpoorten-Mousse:
Die Eigelb in der Rührmaschine cremig rühren. Espresso und Zucker in einen Topf langsam aufkochen lassen. Die Espresso-Zuckermischung nun Löffel für Löffel unter das cremige Eigelb rühren. In das Wasserbad kaltes Wasser einfüllen und die Creme darüber weiterrühren, bis sie abgekühlt ist. Die Sahne steif schlagen und anschließend mit dem Eierlikör und dem Espressopulver vorsichtig unter die Creme heben. Die Creme in die Silikonform füllen und entweder 10 Stunden in den Kühlschrank stellen oder für 1 Stunde gefrieren lassen. Danach aus der Form lösen und zum Servieren auf einen Teller geben.
 
Cranberrysauce:
Die Cranberries waschen, abtrocknen und in einen Topf geben. Sahne, Vanillemark, Zucker und Zitronensaft hinzugeben und alles unter rühren aufkochen lassen. Nun so lange köcheln lassen, bis sich die Sauce einreduziert hat und dickflüssig geworden ist. Durch ein Sieb passieren und zu der Mousse auf den Teller geben.
 
 
 
 
 
Natürlich könnt ihr auch statt Verpoorten-Eierlikör jeden anderen Likör, den ihr gerne habt, verwenden. Auch die Sauce kann weggelassen oder die Früchte ausgetauscht werden. ♥
