Hummus mit roten Rüben

Hummus ist etwas ganz tolles. Egal ob zur Meze, als Snack zwischendurch aufs Brot oder fürs Picknick. Bei meinem Hummus kommen rote Rüben hinein. Und obwohl der Ehemann und die Kinder eher skeptisch gegenüber den roten Rüben eingestellt sind, die Schale mit dem rosa-pinkem Hummus wird immer leergefuttert. Was mich natürlich ganz besonders freut. 🙂

Rosa-pinker Hummus (vegan)
mit roten Rüben und Sesam

Für 4 Personen.
Folgende Zutaten werden benötigt:

400g Kichererbsen (abgetropft aus Dose oder Glas)
150g Rote Rüben/Rote Beete (gekocht und kleingeschnitten)
Saft einer halben Zitrone
Zitronenschale
50g Olivenöl
etwas Zimt
(Meer-)Salz
Pfeffer
2 Knoblauchzehen
2-3 EL Petersilie (frisch oder TK)
1 EL schwarzer Sesam

Außerdem:

Pürierstab

Zubereitung:

Alle Zutaten, bis auf den schwarzen Sesam und die Petersilie, in eine Schüssel geben. Zu einer homogenen Masse pürieren, bis keine Kichererbsenstücke mehr sichtbar sind. Mit dem schwarzen Sesam und Petersilie dekorieren. Sofort servieren oder kühl stellen.

Im Kühlschrank gelagert mindestens 2-3 Tage haltbar.
