Die Zeit des Kürbis ist da und ich hatte mal so gar keine Lust euch ein Suppe zu zeigen. Deshalb wurde es ein Kürbis-Salat, den man auch ideal mit in die Jausenbox für die Arbeit geben kann. Ich mag ihn sehr gerne, denn er hat einen richtig aufregenden Geschmack… Und wie ich finde passt die Farbe des Salates einfach wunderbar zum Herbst

Für 4 Portionen.
Folgende Zutaten werden benötigt:
1 Stück Kürbis, handgröße
5 Karotten
etwas (Meer-)Salz
2-3 Prisen Pfeffer
2-3 EL Essig
3-4 EL (Traubenkern-)Öl
etwas Petersilie
Kürbiskerne

Das Kürbisstück, je nach Art, schälen. Anschließend reiben oder wie ich es mache mit dem Julienne-Schneider bearbeiten. Die Karotten schälen und reiben.

Die restlichen Zutaten in einer Schüssel miteinander vermengen, bis auf die Kürbiskerne. Kürbis und Karotte hinzugeben, verrühren und leicht durchkneten. Dadurch verbinden sich Marinade und Gemüse nicht nur besser der Kürbis wird auch weicher. Die Kürbiskerne unterheben.

Servieren oder noch etwas zum Durchziehen kühl stellen.
