Mac and Cheese I mal total anders I ohne Käse

Man könnte vielleicht meinen es gebe heute eine vegetarisches Rezept, dem ist aber nicht so. Die Mac and Cheese sind nämlich komplett vegan gehalten. Wir essen sie so total gerne, denn sie schmecken einfach grandios.

Auch finde ich, dass die vegane Variante länger sättigt. Mein Mann hat übrigens keinen großen Unterschied herausgeschmeckt, meinte nur, dass noch etwas Salz ran könnte. 😀 Aber nachsalzen ist ja im Nachhinein immer noch möglich und Geschmackssache.

Mac and Cheese (vegan)

Für 4 Portionen.
Folgende Zutaten werden benötigt:
circa 250 g Kartoffeln
circa 120 g Karotten
1 Knoblauchzehe
1 Zwiebel
100 g Cashews
1 EL Essig
1 EL Senf
1 TL Paprikapulver geräuchert
1/2 TL Kurkuma
2 EL Hefeflocken
150 g – 250 g Wasser/Pflanzenmilch
Salz und Pfeffer nach Belieben
500 g Macaroni etc.

Außerdem:
Topf
Mixer/ Thermomix

Zubereitung:

Kartoffeln, Karotten, Zwiebel und Knoblauch schälen und in kleine Stücke schneiden.

In ausreichend Wasser kochen, je nach Stückgröße 15-20 Minuten. Das Wasser abgießen und/oder 250 g davon auffangen.
Zwischenzeitlich die Macaroni nach Packungsanleitung kochen.

Gemüse in das Mixgefäß/den Mixtopf geben. Cashes, Essig, Senf, Paprikapulver, Hefeflocken, Kurkuma und 150-250 g vom aufgefangenden Wasser oder Pflanzenmilch hinzugeben. Je nach gewünschter Konsistenz.
Für bis zu 2 Minuten die Zutaten vermixen.


Ist euer Mixer nicht so kräftig, empfehle ich euch die Cashews für einige Stunden vor dem Mixen in Wasser einlegen zu lassen.
Nach Geschmack salzen und pfeffern.

Die Sauce auf die Macaroni geben und gründlich vermengen. Gleich servieren oder nochmal zusammen erwärmen.

Dazu passt etwas frische Petersilie oder auch pflanzlicher Streukäse.
