Mandel-Halloumi I griechischer Grillkäse I zur orthodoxen Fastenzeit

Kennt ihr Halloumi? Ein griechisch-zypriotischer Käse, der ausgezeichnet schmeckt. In der orthodoxen Fastenzeit muss man sich allerdings etwas einfallen lassen, da man auf tierische Produkte verzichten sollte.

Daher teile ich mit euch ein altes Familienrezept. Der Mandel-Halloumi schmeckt richtig gut, ich habe das Rezept für die „Neuzeit“ schon etwas angepasst. Einen Unterschied zu richtigen Halloumi gibt es allerdings noch, die Konsistenz. Er quietscht nicht genug. Da sich aber viele das Rezept gewünscht haben veröffentliche ich es jetzt schon.

Sollte ich das Rezept nochmal überarbeitet haben, werde ich euch einen Nachtrag schreiben. 🙂

Mandel-Halloumi (vegan)

Keine Sorge, die Zubereitung ist nicht schwer. Ihr müsst nur etwas Geduld aufbringen.

Für circa 6 Halloumi.
Folgende Zutaten werden benötigt:
160 g Mandeln, blanchiert
10 g Hefeflocken (optional)
etwas Meersalz
1 TL Knoblauchgranulat
400 g Mandelmilch
200 g Mandelsahne
80 g Olivenöl
2 EL Zitronensaft
10-12 g Agar-Agar oder 15 g Pektine

Außerdem:
Form
Mixer/Thermomix

Zubereitung:

Die Mandeln über Nacht einweichen. Am nächsten Tag das Wasser entfernen und sie in den Mixer/Thermomix geben. Hefeflocken, Knoblauchgranulat und Meersalz hinzugeben. Alles vermengen lassen.

Anschließend Mandelmilch, Mandelsahne, Olivenöl und Zitronensaft auch in den Mixer geben. Alles für wenige Sekunden mixen, dann gleich in einen Topf füllen.

Agar-Agar oder Pektine einrühren und die Masse zum Kochen bringen. Ist alles einmal aufgekocht die Temperatur verringern und die Masse für weitere 15-17 Minuten köcheln lassen.

In der Zwischenzeit die Form bereitstellen.
Die Masse in die Form füllen und über Nacht im Kühlschrank aushärten lassen.

Den Mandel-Halloumi aus der Form lösen und in Stücke schneiden.

Die Stücke können mit etwas Olivenöl bestrichen ganz kurz in der Pfanne gebraten oder auf den Elektrogrill gegrillt werden. 20 Sekunden reichen voll aus, er wird schnell braun und sehr weich.

Esst ihn noch warm zu Salat oder belegt eure Burger damit. 🙂

Der Halloumi ist im Kühlschrank bis zu 5 Tage haltbar. Eingefroren hält er sich 6 Monate.
Im Rezept von der Oma kommt noch eine Prise Bockshornklee vor, wenn ihr das da habt, gibt unbedingt etwas von hinzu. 🙂

      manche Speisen bereite ich nach wie vor lieber ohne Thermomix zu. Andere dagegen nur noch dort. 🙂
      Du kannst frischen Knoblauch verwenden. Eingefroren habe ich den Halloumi noch nicht, ich bin mir auch unsicher,
      ob er das gut (und schmackhaft) überstehen würde.
