Not macht erfinderisch. Faulheit aber auch. 😀 Ich könnte euch nun eine ellenlange Einleitung schreiben wie diese Marmelade ohne Kochen entstanden ist. Es wunderbar ausschmücken, aber die Wahrheit ist ziemlich schlicht.

Ich hatte Erdbeeren, die weg mussten. Schon lange haben wir keinen Zucker im Haus. Und ich wollte ein Eis essen und Marmelade unterheben. So simple entstand diese Marmelade.

Da ich mich in letzter Zeit viel mit Lebensmitteltechnik befasse, wollte ich eine Marmelade in Rohkostqualität haben. Um das Beste der Erdbeere zu erhalten, denn während dem Kochvorgang verliert man einige Vitamine. Da die Erdbeeren sehr süß im Juni sind, benötigt man keinen zusätzlichen Zucker. Großartig, oder?

Die Erdbeeren waschen, von den Blättern befreien und halbieren. In ein hohes Gefäß geben und pürieren.

Nun das Guarkernmehl hinzugeben und 1-2 Minuten durchpürieren. Bis die Konsistenz passt.

Nun noch bei Bedarf umfüllen, servieren oder weiterverarbeiten.

Tipp: Gelingt auch mit anderen Beeren.

Eure Marmelade ohne Kochen ist im Kühlschrank circa 2 Tage haltbar. Ihr solltet sie natürlich gut verpacken.

Wenn ihr möchtet, könnt ihr die Marmelade prima weiterverarbeiten. Sie eignet sich für Tortencremes, Eis, Füllung von Gebäck, Desserts… für sehr vieles. Bei mir gibt es sie zu Buchweizenwaffeln.
