Penne in cremiger Gemüsesauce | One Pot Pasta

Oh Pasta!!! Seid ihr auch so verrückt danach?! Da Pasta ohne Sauce nicht auskommt, dachte ich mir es wäre mal wieder an der Zeit für ein One Pot Rezept. Ein besonders schmackhaftes.

Diese Penne, ummantelt von einer cremigen Gemüsesauce, ist nur in 20 Minuten gekocht. Alles in einem Topf und wahnsinnig aromatisch. Die Zubereitung ist vegetarisch und vegan möglich.

Penne in cremiger Gemüsesauce (vegan möglich)

Für 2-3 Portionen.
Folgende Zutaten werden benötigt:
1 Zwiebel
1 rote Spitzpaprika
1 Karotte
1 Zucchini
2 Knoblauchzehen
2-3 EL Olivenöl
etwas (Meer-)Salz
2 Prisen Pfeffer
1/2 TL Curry
Prise Kurkuma
Prise Ingwerpulver
1 TL geräuchertes Paprikapulver
1 TL Gemüsebrühpulver
1 EL Petersilie, tiefgekühlt und gehackt
600-650 g Wasser
250 g Penne
100 g Crème fraîche oder vegane Alternative

Außerdem:
Topf

Zubereitung:

Das Gemüse säubern, gegebenenfalls waschen und in Stücke schneiden.
Olivenöl im Topf erhitzen. Das ganze Gemüse hinzugeben und andünsten.

Die Gewürze und Petersilie einrühren und kurz mit andünsten. Mit dem Wasser ablöschen und dieses aufkochen lassen.
Die Penne abwiegen und in den Topf geben. Unter rühren kochen, bis sie weich sind. Bei mir hat das 14 Minuten gedauert, kann aber je nach Sorte und Marke variieren.

Den Herd ausschalten und den Crème fraîche oder die vegane Alternative unter die Penne rühren.
Gleich servieren und genießen!
