Oktober ist der Monat des Kürbis. Kein Besuch im Supermarkt führt dran vorbei. Selbst wenn man keinen kaufen möchte, muss man um ihn herumlaufen. Bei uns sind sie jedenfalls auffällig am Eingang platziert und laden dazu ein im Einkaufskorb zu laden.

Egal ob ihr einen Kürbis rumliegen und keine Idee habt ihn zuzubereiten oder ob ihr bislang einen Bogen um einen 2022 Kürbis gemacht habt, versucht unbedingt die köstlichen Penne in cremiger Kürbis-Sauce.

Mein Mann, die Kinder und auch ich sind wahrlich keine Kürbis-Fans. Aber so zubereitet wird nicht nur alles brav aufgegessen, sondern es muss mehrmals gekocht werden! Kürbisse können halt mehr als nur Suppe.

Die Penne nach Packungsanleitung kochen.

Den Kürbis waschen, die Kerne entfernen und in Stücke schneiden. Zwiebel und Knoblauchzehen schälen und grob schneiden. Alles in eine Pfanne geben, Olivenöl hinzu und anbraten. Für 3-5 Minuten. Salz, Pfeffer, ger. Paprikapulver, Chiliflocken und Gemüsebrühpulver hinzugeben, mit dem Wasser ablöschen.

Alles aufkochen lassen, anschließend die Temperatur reduzieren und für 15-20 Minuten schwach köcheln lassen. Gerne auch mit Deckel, dann verdampft nicht so viel Flüssigkeit.

Den Herd ausschalten. Die Hafersahne und Hefeflocken unterrühren. 5 Minuten durchziehen lassen, dann pürieren.

Die Konsistenz sollte schön cremig sein, ist sie zu fest kann man mit Hafersahne oder Wasser die Sauce etwas verdünnen.

Dir gekochten Penne in die Sauce geben und solange unterheben, bis sie von der Sauce ummantelt sind.

Abschmecken, gegebenenfalls noch etwas nachwürzen und servieren.

Da oft nur ein halber Kürbis verwendet wird, kann die andere Hälfte anders zubereitet werden. Wie wäre es mit einem Kürbis-Flammkuchen? Dieses Blitzrezept eignet sich super, wenn man weder Zeit noch Lust zu kochen hat, aber der Magen ordentlich knurrt.
