Ravioli in Tomaten-Spinat-Sauce | 15-Minuten Gericht

Essen hat viel mehr als nur mit reiner Nahrungsaufnahme zu tun. Gutes, geschmackvolles Essen kann auch glücklich machen. Nicht nur Schokolade oder Süßes schafft es dieses Gefühl im Körper zu verteilen. Auch herzhafte Gericht bekommen es hin.

Die Ravioli in Tomaten-Spinat-Sauce sind ein absolutes Soulfood. Schmeichelt Seele, Körper, Gaumen und Geist. Und ihr benötigt für die Zubereitung nur ungefähr 15 Minuten.

Ravioli in Tomaten-Spinat-Sauce (vegan)

Für 3-4 Portionen.
Folgende Zutaten werden benötigt:
500 g Ravioli
1 Zwiebel
1-2 Knoblauchzehen
400g Tomatenstücke aus der Dose
150 g Mandelsahne/ Sahne
etwas (Meer-)Salz
Prisen Pfeffer
3 EL Olivenöl
100 g Babyspinat
1 TL Zitronensaft
mini-kleine-Prise Zucker
etwas frische Petersilie

Außerdem:
Pfanne
Topf

Zubereitung:

Zwiebel und Knoblauchzehen schälen und kleinschneiden. Babyspinat waschen, säubern und trocknen.
Die Ravioli nach Packungsbeschreibung zubereiten.

Das Öl in die Pfanne geben. Zwiebel hinzugeben und glasig andünsten. Den Knoblauch unterrühren und kurz mitbraten. Mit den Tomatenstücken und der Mandelsahne/Sahne ablöschen. Salzen und Pfeffern. Die Sauce einmal aufkochen lassen, dann die Temperatur niedriger einstellen und die Sauce etwas dicker einkochen lassen.

Zur Sauce Zitronensaft und Zucker hinzugeben. Abschmecken und eventuell mit Salz und Pfeffer etwas nachwürzen. Die gekochten Ravioli unterrühren. Nach für nach den Babyspinat unterheben.
Mit etwas gehackter Petersilie servieren.

Wer möchte und das Gericht nicht vegan belassen muss, der darf auch Parmesan oder Fetakäse drüber streuen. Auch kalt schmeckt es sehr gut.
