Am Sonntag ist Muttertag. Da er bei uns aber eher wie ein normaler Sonntag ablaufen wird, denn mein Mann muss arbeiten und die Kinder sind zu klein um zu verstehen was für ein Tag ist, habe ich mich dazu entschlossen schon etwas früher meinen „Muttertags“-Kuchen zu backen. ♥

Als eine kleine Hommage an meine Mutter, die leider zu weit weg wohnt um diesen Tag mit uns zu verbringen, habe ich einen Kuchen gebacken, welcher voll ihrem Geschmack entsprechen würde.
Ein leichter Rhabarberkuchen mit Streusel. Vegan, schnell gebacken und noch viel schneller verputzt.

Veganer Rhabarberkuchen

 

Für eine 22er Springform:

(Die Zutatenmenge kann ohne Probleme für eine größere Springform verdoppelt werden.)
Folgende Zutaten werden benötigt:
♥300g Mehl
♥150g Zucker
♥1 Prise Salz
♥150g kalte Margarine (z. B. Alsan)
♥1 EL Vanille Extrakt
♥50ml Pflanzenmilch (z. B. Hafermilch von Joya)
♥2 EL Haferflocken
♥300g Rhabarber
♥1 süßer Apfel
Außerdem:
♥Backpapier
♥etwas Margarine zum Einfetten
♥2 Schüsseln
Zum Backen und Kochen verwende ich, wenn ich nicht zu selbstgemachter Pflanzenmilch greife, zu der riesigen Auswahl der Joya-Pflanzendrinks. Es gibt unzählige Sorten, die ich euch in einem anderen Blogpost näher vorstellen werde. 🙂
Zubereitung:
Die Margarine in kleine Würfel schneiden und in eine Schüssel geben. Mehl, Zucker, Salz und den Vanille Extrakt mit hinzugeben und alles mit den Händen gut verkneten.
Den Ofen auf 180°C Ober-/ und Unterhitze vorheizen.
1/3 des Teiges in eine neue Schüssel geben. Zu den verbliebenen 2/3 des Teiges die Hafermilch geben und den Teig glatt rühren. Das Backpapier in die Springform spannen und den Rand der Springform einfetten. Die Teighälfte mit der Hafermilch in die Springform füllen und gleichmäßig auf den Boden verstreichen. Die Springform für 12 Minuten in den Ofen geben und den Teig vorbacken.
Den Rhabarber säubern und kleinschneiden. Den Apfel waschen, das Kerngehäuse entfernen und diesen ebenso kleinschneiden. Wer möchte darf den Apfel auch gerne schälen, mich stört die Schale allerdings nicht.
Die 1/3 des Teiges, welche nun zu Streusel verarbeitet werden, bekommen noch die Haferflocken
hinzu. Kurz durchkneten.
Die Springform aus den Ofen nehmen. Rhabarber- und Apfelstücke hineingeben und die Streusel großzügig drüber verteilen. Wieder in den Ofen geben und für weitere 35 Minuten backen.
Nun kommt auch schon der schwierigste Teil. Der Kuchen muss auskühlen. Allerdings muss ich beichten, ich habe mir gleich nach dem Backen ein kleines Stück abgeschnitten. Es geht doch nichts über ein warmes Stück Kuchen, oder?? 🙂
Wenn ihr nicht gerne leicht sauren Kuchen isst, würde ich euch empfehlen den Rhabarber nach dem Kleinschneiden mit 1 EL Zucker zu vermischen.
