Verrückt-leckere-saftige Schoko-Loco Muffins

Wer diese Muffins probiert, der wird verrückt danach. Sie schmecken so schön saftig und schokoladig. Als kleines Highlight haben die Muffins einen Schokoladenguss, welcher außen fest und innen dennoch weich ist.

Das Rezept ist ganz einfach und quasi gelingsicher. Kalorien solltet ihr nicht zählen, denn das würde euch vielleicht nicht so viel Freude bereiten.

Schoko-Loco-Muffins (vegan)
mit Schokoguss

Für 12 Muffins.
Zutaten für den Teig:
300 g Mehl
150 g Zucker
1 Pck. Vanillezucker
1 TL Natron
1 TL Backpulver
50 g Kakaopulver, ungesüßt
240 g warmes Wasser
80 g neutrales Öl
1 EL (Apfel-)Essig

Zutaten für den Guss:
40 g Margarine
120 g Zucker
30 g Mandelmilch
3 EL Kakaopulver, ungesüßt

Außerdem:
Muffinblech
Muffinförmchen
Schneebesen

Zubereitung:

Den Backofen auf 180°C Ober-/ und Unterhitze vorheizen.
Für den Teig erst alle trockenen Zutaten verrühren. Dann die flüssigen hinzugeben und gut unterrühren.
Den Teig in die Muffinförmchen geben. Diese zu ungefähr 2/3 mit Teig füllen.

Die Muffins 20-25 Minuten backen, dann aus den Ofen nehmen.

Für den Guss geben wir die Margarine in eine Pfanne und lassen diese schmelzen.
Anschließend wird der Zucker hineingerührt und alles mit der Mandelmilch abgelöscht. Das Kakaopulver hinzugeben und sobald alles aufkocht den Herd ausschalten und für circa 3 Minuten weiterrühren. Der Guss darf nicht anbrennen, sonst wird er bitter.

Den Guss noch rasch auf die Muffin verteilen. Ungefähr 1 EL pro Muffin.
Da der Guss sehr schnell fest wird, kann man schon nach wenige Minuten servieren oder die Muffins komplett auskühlen lassen.

Tipp:
Der Teig passt auch prima in eine kleine Springform, diese sollte gut eingefettet sein. Bei 180°C Ober-/ und Unterhitze wird der dann dann für 40-45 Minuten gebacken. Anschließend wie oben beschrieben mit dem Guss fortfahren.

Statt Mandelmilch kann auch ein anderer Pflanzendrink verwendet werden.
