Spargel-Limetten Pasta I 20 Minuten Gericht

Die Spargel-Limetten Pasta ist eins der wenigen Spargelgerichte, welche ich wirklich gerne esse. Zu meiner großen Verwunderung geht es meinen Kindern genauso. Wenn sie Spargel essen, dann nur so zubereitet.

Dieses Pastagericht hat einen besonderen und aufregenden Geschmack.  Limette und Spargel schmeicheln sich unheimlich und sind zusammen ein kulinarisches Dreamteam.

Spargel-Limetten Pasta (vegan)

Für 3-4 Portionen.
Folgende Zutaten werden benötigt:
300 g grüner Spargel
3 EL Olivenöl
1 Zwiebel
1 Limette
Handvoll kleine Tomaten
(Meer-)Salz
Pfeffer
Prise Zucker
Schluck Wasser
500 g Pasta nach Wahl

Außerdem:
Topf
Pfanne

Die Pasta nach Packungsanleitung kochen.
Den Spargel säubern, das holzige Ende abschneiden und zu ungefähr 1/3 schälen.

Die Zwiebel schälen und klein schneiden.
Von der Limette die Schale abreiben und den Saft auspressen.
Die Tomaten waschen und vierteln.

In einer Pfanne das Olivenöl geben und dieses erhitzen. Den Spargel hineingeben und ihn braun und knusprig anbraten.

Den Spargel aus der Pfanne nehmen und die Zwiebeln im Öl dünsten. Salz, Pfeffer, Zucker, Tomaten, Saft der Limette und Limettenschale hinzugeben. Köcheln lassen, bis die Tomaten weich sind. Zwischenzeitlich die Pasta abgießen.

Pasta und Spargel mit in die Pfanne geben. Vorsichtig verrühren und servieren.


Schmeckt auch kalt am nächsten Tag noch köstlich! 🙂
