Viele Gewürzmischungen kann man kaufen. Der Preis variiert je nach Herstellen. Aber irgendwann kommt der Wunsch auf eine Gewürzmischung ganz nach eigenem Geschmack zu kreieren.
Mit dem Thermomix ist es ganz leicht, dieser kann nämlich perfekt mahlen. 🙂
In schon vielen Rezepten habe ich Zitronenpfeffer verwendet. Oft wurde ich gefragt was das ist und was er so kann. Er kann ein Gericht um so einiges aromatischer machen. Natürlich könnte ich euch jetzt einen Shop verlinken wo man ihn kaufen könnte. Aber nichts da, wir stellen ihn selber her 🙂

Selbstgemachter Zitronenpfeffer (vegan)

Für 1 Glas.
Folgende Zutaten werden benötigt:
1 TL brauner Rohrzucker, grob
Prise Kurkuma
Schale einer Bio-Zitrone

Zubereitung: 

Der Pfeffer ist mindestens 1 Jahr haltbar.Die Mengenangaben können problemlos verdoppelt oder verdreifacht werden.

Der Zitronenpfeffer ist eine gute Überleitung zu meinem nächsten Rezept.
Er wird nämlich dafür verwendet.
Griechische Melanzanisauce (vegan)

Diese Sauce kommt optisch einer Bolognese sehr nah.
Geschmacklich kommt sie nicht ganz hin, ist ja auch kein Fleisch drin.
Sie ist vegan gehalten, da man sie so sehr gerne zur Fastenzeit serviert
und isst. Aber auch nach der Fastenzeit wird sie gerne gegessen.
Fleischessern, Vegetarier und auch Veganern schmeckt sie hervorrandet.
Natürlich ist sie auch frei von Sojaprodukten.
Für 4 Personen.
Folgende Zutaten werden benötigt:
❤1 große Melanzani
❤1 Zwiebel
❤2 Knoblauchzehen
❤50g Olivenöl
❤400g Tomatenstücke aus der Dose
❤20g Tomatenmark
❤1-2 TL Salz
❤1/2-1TL Zitronepfeffer
❤circa 320g Wasser
❤1 TL Gemüsebrühe
❤Prise Chiliflocken
❤2 EL TK-Petersilie
 
Zubereitung:
Knoblauch und Zwiebeln in den Mixtopf geben. Für 5 Sekunden /-/ auf Stufe 5 zerkleinern.
Die Melanzani waschen, Anfang und Ende abschneiden und in kleinere Stücke schneiden. Die Hälfte in den Mixtopf geben und für 10 Sekunden /-/ auf Stufe 6 zerkleinern. Den Rest der Melanzani hinzugeben und nochmals für 10 Sekunden /-/ auf Stufe 6 alles zerkleinern.

Das Olivenöl hinzugeben. Für 6 Minuten /100°/ Stufe 1 (Linkslauf) andünsten.
Tomatenstücke, Wasser, Tomatenmark, Gemüsebrühe, Salz, Zitronenpfeffer, Chiliflocken und die Petersilie hinzugeben. Für 25Minuten /98°C/ Sanftrührstufe (Löffelsymbol) auf Linkslauf kochen.
Sobald alles kocht stelle ich die Temperatur gerne auf 90°C runter.

In der Zwischenzeit die Pasta kochen. (In einem Topf auf dem Herd nach Packungsanleitung)
Anschließend abgießen.
Pasta mit Sauce servieren und genießen.
Tipp an die Nicht-Veganer/ oder Nicht-Faster: Unbedingt mit Fetawürfeln servieren. Schmeckt köstlich. 🙂
Die Sauce ist recht dickflüssig, wer eher lieber dünnere Saucen zur Pasta mag, der kann sie mit 180g Wasser oder passierte Tomaten etwas strecken. Wir mögen sie in dieser Konsistenz.
