Thermomix-Thursday #70 – Schnelle Kartoffelsuppe

Suppen sind eigentlich nicht so meins, aber zum Aufwärmen und für die Seele sind sie sehr gut. Dank meines Thermomix koche ich jetzt zwischendurch mal eine Suppe, die Kinder sind begeistert, denn sie finden das klasse. 🙂 Ein paar Rezepte rund um die Suppe(n) tummeln sich schon auf meinen Blog, aber eine hat bis jetzt immer gefehlt…

Schnelle Kartoffelsuppe (vegan)

Nicht nur schnell, sondern auch Dank vielen Kräutern aromatisch. Ich verwende in Suppen zum Mitkochen getrocknete Kräuter, denn frische Kräuter gebe ich erst zum Servieren dazu.

Für 4 Portionen.
Folgende Zutaten werden benötigt:
1 Zwiebel
2 Knoblauchzehen
700g Kartoffeln (ohne Schale gewogen)
500g Suppengemüse (Karotten, Pastinaken, Sellerie, Porree, gelbe Karotten)
10 g Olivenöl/ neutrales Öl
800 g Wasser
etwas (Meer-)Salz
Prise schwarzer Pfeffer
1 TL Thymian, getrocknet
1 TL Majoran, getrocknet
1 TL Oregano, getrocknet
1/2 TL Paprikapulver, mild oder scharf

Zum Dazureichen:
etwas frische Petersilie
Würstchen (vegetarisch oder vegan|ich mag die von Vantastic Foods gerne)
eventuell Brot

Zubereitung:

Das Gemüse waschen und putzen, gegebenenfalls schälen.
Die Kartoffeln vierteln, kleinere halbieren.
Das Suppengemüse in grobe Stücke schneiden.
Zwiebel und Knoblauch schälen, die Zwiebel halbieren.

Suppengemüse, Zwiebel und Knoblauch in den Mixtopf geben. Für 5 Sekunden /-/ auf Stufe 5 zerkleinern. Olivenöl und Kartoffelstücke hinzugeben und für 6 Minuten /100°C/ Stufe 1 Linkslauf anschwitzen lassen.

Wasser, Kräuter und Gewürze hinzugeben. Für 20 Minuten /100°C/ Stufe 1 Linkslauf köcheln lassen.
Wenn es zu stark kocht, auf 98°C oder 95°C die Hitze reduzieren. Je nach Kartoffelgröße die Zeit um 2 Minuten verlängern.

Wer in der Suppe größere Stückchen haben möchte, kann sie so servieren. Ansonsten, für feinere Stückchen, für 3 Sekunden /-/ Stufe 4 leicht pürieren.

Noch warm servieren und mit frischer Petersilie bestreuen.
Brot und (vegetarische oder vegane)Würstchen kann man auch prima dazureichen.
