Bauernfrühstück in der Tomate

Der alte Volksmund sagt: „Iss morgens wie ein König, mittags wie ein Bauer und abends wie ein Bettler!“ Da das königliche Frühstück aber in seiner Zubereitung keine Zeit spart, musste etwas her, was man blitzschnell sich selbst, seinen Liebsten und den Gästen auftischen konnte.

Geboren ist eine tolle Idee! Mein Mann hat vom Markt große Fleischtomaten, ja, die heißen wirklich so :D, mitgebracht. Eigentlich wollte ich sie mit einem Reissalat und Ananas befüllen…aber erstens kommt es anders und zweitens als man denkt 😉

Sie wurden mit einem Bauernfrühstück befüllt, was einfach nur atemberaubend königlich schmeckte 🙂

Für alle, denen nun das Wasser im Munde zusammen läuft…hier kommt das Rezept!

Bauernfrühstück in der Tomate

Für 3 Personen benötigt man:
♥4 Eier
♥3 Gewürzgurken, gewürfelt
♥1 Karotte, in Scheiben geschnitten
♥3 Erdäpfel/Kartoffeln, in kleine Würfel geschnitten
♥1 Paprika, klein geschnitten
♥4 EL Sahne/Milch
♥1 TL Salz
♥1 TL Pfeffer
♥1 TL Paprikapulver
♥1 EL Öl
♥frische oder tiefgekühlte Kräuter nach Wahl
♥3 große Tomaten

Das Öl in einer Pfanne erhitzen. Erdäpfel, Karotten und Paprika in der Pfanne scharf anbraten, anschließend mit 2EL Sahne/Milch ablöschen. 10 Minuten auf schwacher Stufe vor sich hin köcheln lassen, dann die Gewürzgurken, Salz, Pfeffer und Paprikapulver hinzugeben und gut umrühren.

Die Tomaten waschen und abtrocknen. Mit einem Messer den Deckel der Tomaten abschneiden, mit einem kleinen Löffel sie vorsichtig aushöhlen und die Tomaten umgedreht auf einem Küchenkrepp abtropfen lassen.

Damit das leckere Fruchtfleisch der Tomate nicht weggeschmissen wird, könnt ihr daraus einen Tomaten-Gurken Smoothie herstellen: Tomatenfruchtfleisch, 1/2 Gurke geschält und klein geschnitten mit 300g Joghurt und 100ml Wasser pürieren, mit Salz, Pfeffer und Dille abschmecken und gekühlt servieren!

Die Eier in einer Schüssel hineinschlagen, mit 2 EL Sahne verquirlen und in die Pfanne, zu dem Gemüse, gießen.


Die Eier gut verrühren, denn wir wollen ja kein Spiegelei in der Tomate haben. 😉
Solange garen, bis die Eier nicht mehr flüssig um das Gemüse schwimmen. Zum Schluss die Kräuter unterheben.

Nun das fertige Bauernfrühstück vorsichtig in die Tomaten füllen und auf Tellern anrichten.
Gut dazu passt geröstetes Brot.
Auch (vegane)Wurst kann man super mit anbraten.
