Chili sin Carne -mit Quinoa und Kartoffeln

Mein Mann isst schon immer gerne Chili con Carne, ich persönlich finde Chili sin Carne (also ohne Fleisch) ja viel angenehmer zum Essen. Ich gebe immer noch gerne als Austausch zum Fleisch Quinoa und Kartoffeln hinzu.

Für mich ein ideales Rezept für kalte Tage, an denen man ohne großen Aufwand etwas leckeres zubereiten möchte. Durch den Quinoa wird das Chili sin Carne richtig sättigend.

Chili sin Carne (vegan)
– mit Quinoa und Kartoffeln

Für 1 Topf.
Folgende Zutaten werden benötigt:
1-3 EL neutrales Öl
1 Zwiebel
2 Knoblauchzehen
1 Chilischote
2 Paprika, grün und rot
300 g Kartoffeln
200 g weißer Quinoa
circa 700 g passierte Tomaten
700 g Wasser
etwas (Meer-)Salz
2 Prisen Pfeffer
1 Dose Mais
1 Dose Kidneybohnen
1 EL Ketchup
geräuchertes Paprikapulver

Außerdem:
Topf

Zubereitung:

Das Gemüse putzen, vorbereiten und kleinschneiden. Den Quinoa gründlich waschen. Mais und Kidneybohnen von deren Flüssigkeit befreien.

Einen Topf aufsetzten. Das Öl hineingeben. Zwiebelwürfel und Knoblauchstücke andünsten/anbraten lassen. Klein geschnittene Chilischote (wer mag entfern die Kerne), 2 klein geschnittene Paprika, geschälte und gewürfelte Kartoffeln mit hinzugeben und 3 Minuten mitbraten lassen.

Den gewaschenen und abgetropften Quinoa hinzugeben. Mit 500 g passierte Tomaten und 700 g Wasser ablöschen. Mit Salz und Pfeffer würzen, kurz aufkochen lassen und dann die Temperatur verringern und alles 30 Minuten sanft köcheln lassen.

Ketchup, Mais, Kidneybohnen und die restlichen 200 g passierte Tomaten unterrühren, etwas von der Chili sin Carne in eine Schüssel geben und noch warm servieren. Wer möchte kann noch mit etwas geräuchertem Paprikapulver würzen.
