Die Feiertage sind um, der Kühlschrank ist aber noch gut gefüllt? Vor allem mit Resten? Ich kaufe seit einigen Jahren sehr bewusst ein und dennoch kommt es vor, dass manches übrig bleibt. Aber welch eine Freude, dass man damit Chimichangas machen kann.

Chimichangas sind frittierte Burritos. Sie sind nicht nur super zur Restverwertung geeignet, sondern schmecken gigantisch. Bei füllen gibt es keine Grenzen, ich zeige euch aber meine liebste Variante. Was für ein Glück, dass ich Tomatenreis vom Vortag übrig hatte.

Für 8 Chimichanga.

Folgende Zutaten werden benötigt:

  • 8 Wraps, mittelgroß
  • 1 Tasse Reis (vom Vortag)
  • 1 Dose Kidneybohnen
  • 1 kleine Dose Mais
  • 1 kleine Dose Erbsen
  • 80g geriebener Käseersatz
  • 1-2 gegrillte Paprika
  • 1 EL Ajvar, scharf o. mild
  • 1 EL Frischkäseersatz
  • Meersalz
  • Pfeffer
  • neutrales Öl


Erstmal sich um die Füllung kümmern. Wie schon weiter oben erwähnt, darf die gerne und jederzeit umgeändert werden. Gemüse wird vorbereitet, in meinen Tomatenreis vom Vortag gebe ich noch etwas Ajvar und würze nach.

Die Kidneybohnen abtropfen lassen und mit einer Gabel zerdrücken. Dann den veganen Frischekäse, Meersalz und Pfeffer unterrühren.

Die Wraps füllen und wickeln. Damit der vegane Käse gut schmilzt, gebe ich ihn auf das Bohnenmus. Ansonsten einfach nach Lust und Laune füllen und aufrollen. Im Video zeige ich euch, wie ich es mache.

Öl in eine Pfanne geben, bis der Boden bedeckt ist. Warten bis das Öl heiß geworden ist. Die Wraps werden beidseitig je 10-20 Sekunden frittiert. Dann gerne auf ein Küchentuch geben, um das überschüssige Öl abtropfen zu lassen.

Nach Lust und Kühlschrankinhalt einen Salat oder Dip zu den Chimichangas reichen. Sie können warm und kalt verspeist werden.
