Engelsdaumen mit Zartbitterschokolade/ Neuer Puderzucker

Schon seit Monaten nervt mich mein Mann regelrecht damit, dass ich doch mal die Engelsdaumen machen soll. Er hat sie mal in einem Buch gesehen und war gleich hin und weg. Ich konnte lange drum herumreden, ablenken, ein anderes Backwerk vorschieben, die Zeitnot vorziehen…bis ich mich schließlich der Aufgabe stellen musste.

Engelsdaumen sind eigentlich ganz simple herzustellen. Das Einzige was man wirklich braucht ist Geduld. Geduld besitze ich…manchmal 😉 Ansonsten hat man die Zutaten so gut wie immer Zuhause. Engelsdaumen schmecken wie Kokosbaiser, eine interessante Mischung, die für einen besonderen Anlass super passt. Aber auch zum Kaffeekränzchen eignen sie sich sehr gut.

Engelsdaumen mit Zartbitterschokolade

 

Für ca. 22 Stück
Folgende Zutaten werden benötigt:
♥2 Eiklar (Größe M, ca. 60g)
♥Prise Salz
♥60g Zucker
♥30g Kokosraspel
♥50g Puderzucker von Wiener Zucker 
♥100g Zartbitter Kuvertüre



Außerdem:
♥Spritzbeutel
♥Stern-Spritztülle
♥Backpapier
♥Backblech
♥Wasserbad
♥Rührmaschine/Handrührer

Ich habe erstmals den Wiener Zucker -Puderzucker, der ganz neu am Markt ist, ausprobiert. Er wurde mir von Wiener Zucker zum Testen zur Verfügung gestellt. Erhältlich ist er in Österreich in so gut wie jeden Supermarkt, wie Interspar, Merkur, Billa…etc. Er ist in 400g Packungen für ca.0,79€ erhältlich. In Österreich gab es vorher keinen Puderzucker, sondern nur Staubzucker. Groß unterscheiden die beiden Sorten sich nicht, aber der Puderzucker ist feiner und weicher, lässt sich dadurch hervorragend für die Fondantherstellung oder für Royal Icing benutzen und muss nicht mehr stundenlang gesiebt werden.


Zubereitung:
20g Kokosraspel in eine Schüssel geben, den Puderzucker sieben und hinzugeben. Das Eiklar mit der Prise Salz aufschlagen, löffelweise den Zucker (den normalen, nicht den Puderzucker!) hinzugeben, bis eine schöne, seidige und steife Baisermasse entstanden ist.

Nun die Baisermasse vorsichtig mit den Kokosraspel und den Puderzucker vermengen/unterheben.
Die Masse in einen Spritzbeutel füllen und auf das Backpapier in Stäbchenform, ca. 7cm lang, aufspritzen.
Die restlichen (10g) Kokosraspel über die aufgespritzten Stäbchen verteilen.


Nun darf alles bei 90°C (vorgeheizt) Ober/-Unterhitze in den Backofen wandern.
Nach 90 Minuten testet ihr ob die Stäbchen fest geworden sind, dazu nehmt ihr euch eines heraus und bricht es in die Hälfte. Es sollte außen hart und innen weich mit einem Hohlraum sein.
Wenn dies der Fall ist dürfen sie aus dem Backofen heraus und abkühlen, falls nicht werden sie noch weitere 20 Minuten in den Ofen „gebacken“.


Wenn die, noch nicht ganz fertigen, Engelsdaumen ausgekühlt sind dürfen sie ein kleines Schokoladenbad nehmen. Dafür hackt ihr die zartbitter Kuvertüre fein, gebt sie in eurer Wasserbad und lasst sie sanft schmelzen. Nun werden die Spitzen der Engelsdaumen in die flüssige Schokolade getaucht und immer zwei Stück von ihnen zusammengeklebt. Gebt sie auf ein Backpapier, damit die überschüssige Schokolade ablaufen kann.

Nach ca. 1 Stunde ist die Schokolade gehärtet und ihr könnt die Engelsdaumen servieren. ♥
