Ich esse so gerne Gemüse-Curry, aber mache es viel zu selten. Dabei ist es toll um Gemüse zu verwerten. Außerdem finde ich, es schmeckt immer nach Urlaub und Erholung!

Erfrischend einfach landet das Gemüse-Curry auf eurem Teller. Ihr könnt dazu Reisnudeln, Brot oder auch Reis servieren.

Jeder Löffel ist ein Genuss! Ab jetzt wird es wieder mehr Gemüse-Curry bei uns geben, denn auch die Kinder waren begeistert und es blieb kein Rest übrig.

OLYMPUS DIGITAL CAMERA

Für 4-5 Portionen.

Folgende Zutaten werden benötigt:

  • 2-3 Karotten
  • 3 Kartoffeln
  • 1 Zucchini
  • 1 Zwiebel
  • 1/4 Krautkopf
  • 1 Paprika
  • 1 EL Kokosöl
  • 1-2 TL rote Currypaste
  • 165 ml Kokosmilch
  • 200 ml Wasser
  • 1 Dose Kichererbsen
  • 200g Fisolen oder Brokkoli, tiefgekühlt
  • (Meer-)Salz und Pfeffer
  • 100 ml Kokossahne
  • 1 EL Tomatenmark
  • Etwas Petersilie

Außerdem:

Zubereitung:

Das Gemüse vorbereiten. Waschen, eventuell schälen, kleinschneiden. Die Kichererbsen abgießen, die Flüssigkeit benötigen wir für dieses Rezept nicht.

Den Reis kochen, ich verwende dafür gerne den Reiskocher.

Kokosöl in den Wok geben und erhitzen. Die Chilipaste kurz andünsten. Kraut, Zwiebeln und Kartoffeln hinzugeben und 5 Minuten anbraten.

Das restliche Gemüse hinzugeben und ebenfalls anbraten.

Mit der Kokosmilch und dem Wasser ablöschen.

15 Minuten sanft köcheln lassen.

Fisolen/Brokkoli hinzugeben, ebenso die Kichererbsen. Kokossahne, Tomatenmark und Petersilie einrühren. Abschmecken mit Salz und Pfeffer.

Für 2 Minuten ziehen lassen, dann kann schon serviert werden.
