Für viele ist der Karottenkuchen ein Osterkuchen. Dabei ist er so lecker, dass es zu schade wäre ihn nur zur Osterzeit zu verspeisen.

Welche ein Glück, dass unser Besuch sich Karottenkuchen gewünscht hat. Um es genauer zu sagen Karotten-Apfel-Kuchen mit Mandeln. Super saftig und so aromatisch. Ein toller, schneller Kuchen, für jede Gelegenheit.

Für einen Karotten-Apfel-Kuchen.

Folgende Zutaten werden benötigt:

  • 2 Karotten
  • 1 Apfel
  • 350g Mehl (Dinkel oder glutenfreies)
  • 80 g Mandeln, gerieben
  • 200 ml Öl
  • 150-200 g Zucker oder Erythrit
  • Prise Zimt
  • Prise Salz
  • 2 TL Backpulver
  • 30-50 ml Mandelmilch
  • Etwas Zitronensaft

Außerdem:

Zubereitung:

Den Ofen auf 180°C Ober- und Unterhitze vorheizen.

Karotten und Apfel waschen, schälen wenn gewünscht, das Kerngehäuse des Apfels entfernen und reiben. Ich gebe beides für 5 Sekunden in meinen Mixer.

Für den Teig erst alle trockenen Zutaten miteinander verrühren, dann die feuchten hinzugeben. Auch die Karotten- und Apfelraspel. Gut vermengen.

In die mit Backpapier ausgelegte Form geben, glattstreichen. Für 40-45 Minuten backen.

Je nach Formgröße sollte die Backzeit angepasst werden.

Aus dem Ofen nehmen und auskühlen lassen.

Ich habe noch ein Topping auf den Karotten-Apfel-Kuchen gegeben. Dieses besteht aus 200g Frischkäse-Ersatz (kurz in einem Nussmilchtuch abtropfen lassen) 3-4 EL Erythrit (zu Staub gemahlen) und etwas Zitronensaft. Einfach miteinander verrühren und dann ab auf den kalten Kuchen.

Noch ein paar Physalis zur Deko und fertig ist der Kuchen.
