Karotosalata -Karottensalat

Noch auf der Suche nach einem tollen, frischen und schmackhaften Salat? Einen Karottensalat mal anders? Dann probiert doch meine griechische Variante aus. 🙂 Wer möchte kann ihn entweder vegetarisch oder vegan zubereiten.

Wer genug von Salaten hat kann in auch aufs Brot geben. Sozusagen als Ausfrisch. Für mich es eine tolle Alternative zum Fleischsalat geworden, schmeckt natürlich anders (ist auch kein Fleisch enthalten 😀 ) aber den gleich Zweck erfüllt er, ein leckerer Salat für die Semmel oder Brotscheibe.

Karotosalata (Καροτοσαλάτα)
Griechischer Karottensalat (vegan möglich)

Für 3-4 Portionen.
Folgende Zutaten werden benötigt:
300g Karotten, gerieben
1 EL Olivenöl
200g (Soja-)Joghurt
Saft einer halben Zitrone
etwas Zitronenschale
1 EL Walnüsse, gemahlen
1 TL Minze, getrocknet
(Meer-)Salz
Pfeffer

Außerdem:
Reibe
Schüssel

Zubereitung:

Eine Pfanne auf die Herdplatte geben. das Olivenöl erwärmen und die Karotten die andünsten. 3-5 Minuten gelegentlich umrühren und dann die Herdplatte etwas herunterschalten. Den Knoblauch, frisch gepresst, hinzugeben. Umrühren, den Herd ausschalten und sie Pfanne zum Auskühlen an die Seite stellen.

In einer Schüssel (Soja-)Joghurt, Zitronensaft, Zitronenschale, getrocknete Minze, gemahlene Walnüsse, Pfeffer und (Meer-)Salz  verrühren und abschmecken.

Die ausgekühlten Karotten hinzugeben und unterrühren. Entweder gleich kühl stellen oder servieren.

Der Salat ist im Kühlschrank gelagert mindestens zwei Tage verwendbar. 🙂
