Egal ob Hitze oder Kälte, ich liebe Nudelsalat. Der geht nämlich immer. Obwohl ich schon zugeben muss, dass wenn es draußen 34°C hat, ich kaum etwas essen kann. Bis auf Nudelsalat. Vegan, schnell gemacht und super lecker!
Für die anderen ist er nur eine Beilage, zum Beispiel zum veganen Grillmix. Aber für mich geht es durchaus auch als alleiniges Essen. Als Frühstück, Mittagessen und Abendessen.
Ihr könnt dafür jede Pasta verwenden. Ich verwende am liebsten Tortelloni oder Tortellini (diese sind kleiner). Aber auch mit Penne und Fussili wird der Nudelsalat zum Highlight.
Für eine Schüssel.
Folgende Zutaten werden benötigt:
- 600 g Pasta nach Wahl
- Kichererbsen aus der Dose
- Karotten & Erbsen aus der Dose
- Mais aus der Dose
- 5 getrocknete Tomaten in Öl
- 2-3 Gewürzgurken
- 2-4 EL Gewürzgurkensud
- 150g Mayonnaise-Ersatz
- 150g Frischkäse-Ersatz
- 4 EL Kräuter
- Meersalz und Pfeffer
Zubereitung:
Pasta nach Packungsanleitung kochen.
Die Dosen abgießen. Den Inhalt in eine Schüssel geben. Die Gewürzgurken und getrocknete Tomaten kleinschneiden und ebenfalls hinzugeben.
Mayonnaise-Ersatz und Frischkäse-Ersatz mit etwas Gewürzgurkensud verrühren. Meersalz und Pfeffer hinzugeben. Außerdem die Kräuter, ich verwende TK Kräuter. Eine 8-Kräuter Mischung und Petersilie. Gut verrühren, abschmecken und in die große Schüssel geben.
Nun die Pasta unterheben.
Nun den Nudelsalat etwas ziehen lassen, mindestens eine Stunde. Im Kühlschrank aufbewahren!
Ideal als Grillbeilage. Ich kann euch aber auch meine veganen Fleischlaibchen dazu empfehlen.
