Da wir oft vegane Frischkäsereste haben, können diese gleich verbraucht werden. Heute wähle ich einen mit Paprika, aber es geht wirklich jeder.

Für 2-3 Portionen.

Folgende Zutaten werden benötigt:

  • 1 Zwiebel
  • 2-3 Knoblauchzehen
  • etwas neutrales Öl
  • 100-200 g Frischkäseersatz
  • 50 ml Wasser/Mandelmilch
  • 2 Handvoll Blattspinat
  • 500 g Schupfnudeln
  • Salz und Pfeffer
  • etwas Muskatnuss, gerieben
  • 2 EL Hefeflocken
  • etwas Apfelessig

Zubereitung:

Zwiebel und Knoblauch schälen und kleinschneiden. Öl in eine Pfanne geben, Zwiebel und Knoblauch andünsten. Den Frischkäseersatz und das Wasser/die Mandelmilch hinzugeben. 1 Minute köcheln lassen.

In der Zwischenzeit die Schnupfnudeln mit heißen Wasser übergießen, dann das Wasser abgießen und die Schupfnudeln in dir Pfanne geben.

Würzen, dann den Blattspinat (natürlich gewaschen und getrocknet) unterheben. Die Pfanne vom Herd nehmen, Hefeflocken und Apfelessig hinzugeben.
