Leckere Stachelbeere-weiße Schokoladen Muffins

Dieses Rezept lässt sich ganz einfach variieren.

Egal ob mit Himbeeren, Erdbeeren oder auch Bananen. Bei süßeren Früchten die Zuckermenge auf 90g reduzieren. Natürlich kann man auch statt weißer Schokolade eine andere Sorte wählen wie Zartbitter oder Vollmilch.

Leckere Stachelbeere-weiße Schokoladen Muffins

 

Das Rezept reicht für 12 riesige oder 18 normal große Muffins!
Folgende Zutaten werden benötigt:
♥100g weiße Schokolade
♥250g Stachelbeeren
♥125g brauner Zucker (feiner Rohrzucker)
♥1 Pck. Vanillezucker
♥150g Butter, zimmerwarm
♥Prise Salz
♥1 Pck. Backpulver
♥3 Eier
♥10 EL Milch
♥270g Mehl
 
Außerdem:
 
 
 
Zubereitung:
Den Ofen auf 170°C, Ober- und Unterhitze, vorheizen.
Die Schokolade kleinhacken und die Stachelbeeren säubern. Butter, Salz, Vanillezucker und Zucker miteinander verrühren. Die Eier nach und nach hinzugeben und gut hineinrühren. Mehl und Backpulver vermischen und löffelweise, im Wechsel mit der Milch, zu der Butter-Eier-Masse geben. Die Schokolade unterheben.
 
Die Papierförmchen ins Muffinblech setzen.
Den Teig in die Förmchen geben und die Stachelbeeren hinaufgeben. 
Für ca. 25 Minuten backen. Bitte die Stäbchenprobe machen, wenn kein Teig am Holzstäbchen hängen bleibt sind die Muffins fertig.
 
Wer möchte darf die Muffins noch mit Deko, wie Zuckerperlen, verzieren.
Am besten schmecken sie abgekühlt.
