Thermomix-Thursday #67 – Kürbispüree

Jedes Jahr das Selbe. Kürbis so weit das Auge im Herbst reicht. Ich werde nie ein großer Fan davon sein. Vielleicht auch weil ich ungerne und nicht oft Suppen esse und ich mich endgültig von meinem geliebten Sommer verabschieden muss. Aber da es sowohl in der griechischen als auch in der rumänischen Küche Rezepte mit Kürbis gibt, stelle ich mir jedes Jahr ein Kürbispüree her.

Das Kürbispüree hat für mich den Vorteil, dass es gut haltbar ist und so vielseitig zu verwenden. Egal ob süße, salzige oder würzige Speisen. Sogar für Getränke ist es geeignet. Die Herstellung ist sehr mühelos, dass man es schon nebenher beim Buchlesen herstellen kann.

Kürbispüree (vegan)

Für 3-4 kleine Gläser.
Folgende Zutaten werden benötigt:
800g Wasser
1 Kürbis (ich habe die Sorte Butternut verwendet)

Außerdem:
3-4 kleine Gläser, steril

Zubereitung:

Den Kürbis von seinen Kernen befreien. Je nach Kürbisart die Schale entfernen oder dran lassen. In Stücke schneiden und in dem Varoma (mit Einlegeboden) verteilen.

Das Wasser in den Mixtopf füllen, den Varoma aufsetzen und für 28 Minuten /Varoma/ Stufe 1 den Kürbis weich garen.
Im Anschluss das Wasser aus dem Mixtopf entleeren, den Kürbis hineingeben und ihn für 30 Sekunden /-/ auf Stufe 8 fein pürieren. Noch heiß in Gläser abfüllen und diese verschließen.

Das Kürbispüree bleibt so im Kühlschrank gelagert eine Woche haltbar. Mit einkochen bekommt ihr diese Zeit um ein vielfaches verlängert. Ich koche die kleinen Gläschen auch gleich im Varoma ein (Ein Ofen ginge natürlich auch).

Benötigt wird:
1 Liter Wasser
befüllte kleine Gläser

Zubereitung:

Die Gläser in den Varoma stellen. Den Mixtopf mit dem Wasser befüllen, den Varoma aufsetzen und für 25-30 Minuten /Varoma/ Stufe 1 alles einkochen lassen.

Die Haltbarkeit ist nun mehrere Monate und das Püree muss auch nicht mehr im Kühlschrank gelagert werden. Nur kühl und dunkel. -außer ein Glas wurde geöffnet.

Wer nicht einkochen möchte, der kann auch einfrieren. Ich verwende dafür gerne meine Eiswürfelformen.
