In ein paar Tagen habe ich Geburtstag. Zu meinem Geburtstag hat mir meine Oma immer etliche Kilo Blaubeeren geschenkt. Ich liebe Blaubeeren, mein Leben lang schon. Leider ist meine Oma im August 2020 verstorben, jedes Mal wenn ich Blaubeeren esse muss ich an sie denken. Es sind sehr schöne Erinnerungen…ihre Späße, wie sie mir in ihrer Küche gezeigt hat wie man Marmelade einkocht, ihr großes Wissen über historische Erlebnisse, Tierarten und Pflanzen welche sie benennen konnte. Das heutige Rezept möchte ich ihr widmen. Es hätte ihr sicher sehr gut gefallen. Und sie hätte extra viele Blaubeeren in die Zitronen-Blaubeer-Muffins sich gewünscht.
Die Zitronen-Blaubeer-Muffins sind hervorragend für den Sommer geeignet. Sie sind nicht zu süß, fruchtig erfrischend und sehr schnell zubereitet. Keiner möchte bei den Temperaturen lange in der Küche stehen. Und natürlich vegan. Kein Ei wird benötigt um einen luftigen Teig zu erschaffen.
Ich verwende Erythrit, wie ihr es von mir schon kennt. Aber auch Zucker kann man verwenden. Zucker ersetze ich 1:1 durch Erythrit, für mich reicht die Süße so aus. Und da Öl auch gerne mal knapp wird, ihr könnt die Ölmenge im Rezept durch 150g Margarine, geschmolzene, austauschen. Aber ich muss sagen, Öl lässt die Muffins leichter erscheinen und gibt ihnen eine weichere Konsistenz.
Wer keine frischen Blaubeeren verwenden möchte kann auch zu gefrorenen Blaubeeren greifen. Die Menge bleibt gleich.
Für 12 große Muffins. Oder 20 „normalgroße“ Muffins.
Folgende Zutaten werden benötigt:
- 300-320g Mehl
- 1 Pck. Backpulver
- 220g Zucker o. Zuckerersatz
- 200ml Mandelmilch
- 120g Öl, neutrales
- 80g Zitronensaft
- Schale 1 Zitrone
- 200g Blaubeeren
Außerdem:
Zubereitung:
Den Ofen auf 180°C vorheizen.
Die trockenen Zutaten in eine Schüssel geben. Kurz miteinander verrühren.
Nun folgen die flüssigen Zutaten, allerdings werden nur 2/3 der Blaubeeren hinzugeben. Kräftig umrühren, circa 2 Minuten lang.
Das Muffinblech mit den Förmchen bestücken. In die Förmchen den Teig aufteilen. Die restlichen Blaubeeren auf den Teig platzieren.
Die Muffins müssen nun 18-22 Minuten gebacken werden. Größe Muffins manchmal sogar bis zu 25 Minuten. Je nach Größe und Ofen variiert das gerne mal.
Die Zitronen-Blaubeer-Muffins auskühlen lassen oder noch lauwarm verspeisen.
