Früher, vor 15 Jahren, hat mein großer Bruder mir immer aus einem schwedischen Möbelhaus Haferkekse mitgebracht. Mittlerweile leben wir sehr weit voneinander entfernt und zu dem Möbelhaus, welches eine echt große Lebensmittelabteilung hat, komme ich nur selten. Vor 6 Jahren war ich das letzte Mal dort. Ich weiß, viele lieben es dort durch die Gänge zu schlendern, mir ist es zu menschenüberfüllt.

Auf die Haferkekse möchte ich dennoch ungerne verzichten. Daher habe ich lange am, für mich richtigen, Rezept gewerkelt. Ich möchte knusprige Haferkekse, die vegan sind, glutenfrei zubereitet werden können und man für diese, wenn gewünscht, kein Zucker benötigt wird. Das sind große Anforderungen, aber machbar. Im heutigen Rezept zeige ich wie ihr sie auch backen könnt.

Knusprige Haferkekse I Ikealike

Für 20-22 Haferkekse.

Folgende Zutaten werden benötigt:

Zubereitung:

Den Ofen auf 180°C Ober- und Unterhitze vorheizen.

Alle Zutaten miteinander verrühren, entweder händisch oder mit einer Küchenmaschiene.

Aus der Teigmasse mit den zwei Löffeln eine Kugel formen und diese aufs Backpapier setzen. Etwas plattdrücken. Gute Abstände einhalten und so fortfahren, bis der ganze Teig verbraucht ist.

Für 12-14 Minuten backen. Je länger, desto knuspriger werden die Kekse.

Kurz etwas abkühlen lassen und dann vom Backpapier nehmen.

Tipp: Verwendet einen Butterersatz, der im Kühlschrank fest wird! Mit diesem habe ich die besten Haferkeksbackerfahrungen gemacht. Ihr könnt euren Keksteig auch aufpeppen, mit Zimt, gemahlene Vanille und/oder Kakaopulver.
