Buttercreme und ihre Vielfalt

Nach vielen süßen und auch herzhaften Rezepten kommt auch mal wieder die Zeit sich mit dem Thema Tortendekoration auseinander zu setzen. Die Materiale (Roll-)Fondant ist mir schon vertraut und wurde auch sehr oft verwendet, modelliert oder vor Frust gegen eine Wand geworfen. 😀
Doch irgendwann kommt man an den Punkt etwas neues zu lernen. Etwas Spannendes, eine kleine Herausforderung, etwas woran man sich vorher vielleicht nicht herangetraut hätte…

Nach meinem Isomaltexperiment ist nun die Buttercreme an der Reihe. Ein Buch zur Buttercremekunst war bis vor wenigen Monaten schwer zu finden, denn das Thema wurde nur Stückweise in diversen Büchern angeschnitten. Außer man suchte im englischen Bücherwald, da hatte man recht gute Chancen ein passendes Buch zu finden. Für alle Englischmüffel oder Ich-möchte-alles-in-einem-Buch-haben-Haber ist es Zeit zum Aufatmen.
Ein Buch, voll gefüllt mit Buttercreme (im schriftlichen Sinne), ist erschienen und ich habe es mir mal genauer angesehen und damit angefangen zu arbeiten.
Übrigens habe ich wohl auch die unschönsten Buttercremerosen der Welt gespritzt, aber darauf gehe ich gleich nochmal genauer ein. 🙂

Das Buch ist eine Übersetzung des Originaltitels ,,The Comtemporary Buttercream Bible“,
welches im Sommer 2014 erschienen ist und top Verkaufszahlen schreibt. Und dem steht die deutschsprachigen Version in keinem nach.


Nach einer sehr nett geschriebenen Einleitung, wo ich viel schmunzeln musste, folgen
tolle Kapitel, die gut durchstrukturiert sind.

1. Grundlagen und Frosting
2. Strukturen und Muster spritzen
3. Blumen spritzen
4. Techniken für die Winkelpalette
5. Muster übertragen, stempeln und schablonieren
6. Textile Effekte
7. Schreiben
8. Zusätzliche Dekoration


Nach den Kapitel folgen Vorlagen zu den gestalteten Abbildungen, damit wir sie bestens nachmachen können. Außerdem bekommen wir eine Liste mit Lieferanten, Infos über die Autorinnen, eine Fotoübersicht der Projekte des Buches und einen Index zum Stichwörter nachschlagen.


Wer sich in dem Buch viele Rezepte erhofft, der wird leider etwas traurig sein, denn es sind ein Frosting Grundrezept (und eine Übersicht wie man den Geschmack verändern kann) und ein Grundrezept für Cupcakes enthalten. Eigentlich ausreichend für ein Buch wo es um Dekorationen geht. Da es allerdings weit mehr als nur eine Buttercremeart gibt, nämlich auch eine deutsche -, eine italienische -, eine französische Buttercreme, wäre ich sehr über diese Rezepte in einer Buttercreme Bibel, so wie sie im englischen genannt wird, erfreut gewesen. Ich weiß nicht wie die anderen Buttercremearten sich beim Spritzen verhalten und ob sie das bewünschte Ergebnis bringen, aber ich finde sie hätten einen Platz, auch wenn es nur eine Seite gewesen wäre, in dem Buch verdient gehabt.


Die Torten und Cupcakes sind ein Traum. Nie zuvor hätte ich gedacht, dass man so tolle Effekte mit Buttercreme erzielen kann. Da das Buch auch Grundlagen zeigt, wie man Torten stapelt, sie einstreicht, Tortenplatten eindeckt, Frosting einfärbt und Cupcakehauben spritzt, ist es bestens für Anfänger und Neulinge geeignet. Wissen und Interesse am Backen und Dekorieren schadet nicht, aber wenn es um Muster und Blumen spritzen geht macht Übung einfach den Meister.


Gerne backe oder koche ich Rezepte aus Büchern nach, um sie euch dann vorstellen zu können. Außerdem „teste“ ich so auch gleich die Stimmigkeit der Rezepte aus, denn es gibt nichts blöderes als ein Buch mit Rezepten, die nichts taugen. Dies war durch die wenigen Rezepte nicht wirklich möglich, daher habe ich mir etwas aus den Kapitel ausgesucht, was ich euch zeigen kann.

Folgendes wird benötigt:
♥Frosting, etwas verdünnt
♥Spritzbeutel
♥Schablone
♥Winkelpalette, ein stumpfes Messer oder ähnliches
 
Ich habe, wie ihr seht, das schablonieren auf ein Blatt Papier getestet. Das würde ich euch auch empfehlen, denn so bekommt man ein Gefühl für die richtige Streichtechnik und kann in Ruhe üben.
 


1.) Lege die Schablone auf dein Fondant, die eingestreichte Torte..etc. (oder ein Blatt Papier 🙂 ) und trage etwas Buttercreme grob auf. Verstreiche diese nun mit einem leichten Druck, mit der anderen Hand sollte die Schablone festgehalten werden.



2.) Den Überschuss an Buttercreme vorsichtig entfernen.
Die Schablone langsam und gleichmäßig abziehen.
Das Motiv nun antrocknen lassen.
 
 
3.) Fertig! 🙂
 
Natürlich wollte ich auch unbedingt Blüten spritzen. Na ja, nur weil man etwas will heißt es nicht automatisch, dass es prima klappt. Mein Rosen sehen eher nach Haufen mit etwas Struktur aus…
 
Ich zeige euch meine „Rosen“, damit ihr, falls es bei euch auch nicht so richtig funktionieren möchte, an mich zurückdenken könnt und nicht aufgibt weiter zu üben. Ich werde nun auch gaaanz viel üben, um bis zum Muttertag schöne Rosen spritzen zu können. 🙂
 
 
  • Leider hatte ich mit der Buttercreme einige Differenzen, ich habe sie nach dem Buchrezept zubereitet, aber erst war sie brüchig beim Spritzen und mit ein/zwei Topfen Wasser hielt sie nicht gut die Form. Ich werde die Schuld nicht auf das Rezept schieben, denn dafür bin ich einfach zu unerfahren was die Buttercremekunst angeht, sondern nochmal das Rezept probieren und dann schauen ob ich einen Fehler meiner ersten Zubereitung aufdecken kann.
Ich hoffe, dass die Buttercreme und ich bald ein gutes Duo sind und wir zusammen viele Torten verschönern können. Mit dem Buch habe ich tolle Tipps, Inspirationen und Anregungen erhalten, die mir sehr helfen werden. Eure Meinungen zum Buch interessieren mich sehr. Habt ihr es schon in eurem Bücherregal stehen?
