Ich hatte sooo eine große Lust etwas mit Erdbeeren zu backen. Gesagt und getan. Es sind dabei richtig saftige Erdbeerschnecken entstanden.
Die Erdbeerschnecken schmecken lauwarm und auch kalt. Pur oder mit einer leckeren Vanillesauce. Perfekt, wenn Besuch kommt oder fürs Picknick.
Für 8 Erdbeerschnecken.
Folgende Zutaten werden benötigt:
- 400g Mehl, Dinkel oder glutenfreies
- Prise Salz
- 50g Zucker/Erythrit
- 50g Margarine, weich
- 1/2 Germwürfel
- 240ml Mandelmilch
- 60-120g Erdbeermarmelade
- 60 g Erdbeeren

Alle oben genannte Zutaten, bis auf Marmelade und Erdbeeren, zu einem Teig verkneten.
Den Teig für mindestens eine Stunde, besser sind zwei Stunden, ruhen lassen.
Danach sollte sich das Teigvolumen mindestens verdoppelt haben. Auf einer bemehlten Arbeitsfläche zu einen Rechteck ausrollen. Mit der Marmelade bestreichen, kleingeschnittene Erdbeeren drauf verteilen und dann zu einer Rolle aufrollen. Die Rolle in 8 Stücke teilen. Die entstandenen Erdbeerschnecken in eine Backform setzen.
Den Ofen auf 180°C Ober- und Unterhitze vorheizen.
Wenn gewünscht, die Erdbeerschnecken mit etwas Mandelmilch bestreichen. Für 22-28 Minuten backen.
Aus dem Ofen nehmen und etwas abkühlen lassen. Dann können die Erdbeerschnecken auch schon serviert werden.
