Meine Liebe für Pfannenbrote habt ihr sicher schon mitbekommen. Heute folgt mal wieder ein ganz tolles, welches mit Pesto und Käseersatz gefüllt wurde. Unbedingt nachmachen!
Natürlich könntet ihr auch die Füllung abändern und anpassen. Das macht dem gefüllten Pfannenbrot nichts aus. Ich verwende gerne mein Rucola-Pesto. Dieses ist mit Walnüssen und äußerst köstlich.
Die gefüllten Pfannenbrote können warm oder auch kalt gegessen werden. Somit sind sie auch etwas für die Jausenbox oder ein Picknick.
Für 4 gefüllte Pfannenbrote.
Folgende Zutaten werden benötigt:
- 390 g Mehl, Dinkel oder glutenfreies
- 1 Prise Meersalz
- 60 g Margarine
- 1 TL Süße (Zuckerersatz oder Agavendicksaft)
- 180 ml Wasser, lauwarm
- circa 60 g Pesto
- etwas Käseersatz
Außerdem:
- Pfanne
- Öl

Aus Mehl, Margarine, Wasser, Salz und Süße einen Teig kneten. Das geht ganz einfach mit den Händen, keine Küchenmaschine ist notwendig. Aus dem Teig eine Kugel formen.
Die Teigkugel in vier Teile teilen. Diese dann jeweils wieder zu einer Kugel formen. Die Arbeitsfläche etwas einölen und die kleinen Teigkugeln rund ausrollen. Mit Pesto bestreichen und mit Käseersatz bestreuen. Die Teigstücke dann so umschlagen, dass die Füllung innen und gut umschlossen ist.
Nun die Teiglinge wieder ausrollen, entweder rund oder länglich.
Eine Pfanne erwärmen, gerne mit etwas Öl. Die Teigstücke dann je Seite 2-3 Minuten braten, bis sie eine schöne Farbe angenommen haben und kein Teig innen mehr roh ist.
Aus der Pfanne nehmen.
Servieren oder erkalten lassen.
Tipp des Tages: Schmecken auch super mit Schokocreme (mein NOtella Rezept) oder Marmelade. Dann sind es süß-gefüllte Pfannenbrot.
