Milch ohne Muh und Mäh

Meine ersten Erfahrungen mit pflanzlicher Milch machte ich im September 2013. Nach einer Operation habe ich weder tierische Fette noch tierische Eiweiße vertragen. Am Anfang war es etwas schwer, nicht wegen der veganen Koch- und Backweise, denn die kannte ich schon aus unserer orthodoxen Fastenzeit vor Ostern und Weihnachten, nein, es lag mehr an den Produkten die es zu kaufen gibt. (Mittlerweile vertrage ich tierische Produkte wieder besser, ernähre mich aber zu 70% vegan, da ich damit sehr gut auskomme und mich gesünder, fitter und wohler fühle. Zu 30% wird auf die vegetarische Ernährung zurückgegriffen.)

Unzählige Produkte sind gespickt mit einer ellenlangen Zutatenliste, sich dort durchzuwühlen dauert ewig. Das alles um dann vielleicht enttäuscht zu sein, dass man den Schokoladenriegel doch nicht essen darf. Auf meinen Zweitblog, der sich noch mitten im Aufbau befindet, möchte ich auf das Thema gerne genauer eingehen. Hier soll es weiterhin ums Kochen, Backen, Rezepte und um Bücher gehen. Wenn ihr vorab Fragen dazu habt dürft ihr sie mir natürlich jederzeit stellen, entweder hier in den Kommentaren oder auch per E-Mail. 🙂

Wer Pflanzenmilch selbst herstellen möchte, der muss etwas Zeit einplanen. Die Nüsse, zum Beispiel Mandeln, müssen über Nacht in Wasser einweichen. Dann werden sie mit frischen Wasser püriert, die entstandene Flüssigkeit wird in ein Nussmilchbeutel oder ein Passiertuch geschüttelt und darf nun langsam vor sich hin tröpfeln. Da ich sehr viel mit Pflanzenmilch backe und koche, hätte ich mindestens alle zwei Tage ein Nussmilchbeutel rumhängen. Lange habe ich nach Alternativen, die mich schneller zur gewünschten Pflanzenmilch bringen könnten gesucht. Und ich habe sie gefunden…

…Die Firma Keimling bietet ein Gerät an, welches sich Veggiefino nennt.
Der Veggiefino schafft es nicht nur in wenigen Minuten Nussmilch herzustellen, sondern es gibt auch unzählige Rezeptmöglichkeiten. Ich habe meinen Veggiefino nun seit Dezember und ich bereue es ihn nicht schon früher in meiner Küche einziehen lassen zu haben.
Behälter, Filtereinsatz und Stößel, das Gerät ist nicht sehr kompliziert aufgebaut. Es ist BPA-frei und bestens für Rohköstler, Veganer und Allergiker geeignet. Auch vor Fruchtdrinks oder Reismilch macht der Veggiefino kein Halt. Lediglich benötigt man neben den Zutaten für den Drink einen Pürierstab.
Da die Pflanzenmilch oder die anderen Drinks nicht erhitzt werden müssen bleiben alle Inhaltsstoffe erhalten. Einen ganz klaren Vorteil sehe ich noch in den Veggiefino. man kann die Süße der Drinks komplett selbst bestimmen und auf die eigenen Vorlieben abändern. Ob mit Zucker, getrocknete Datteln oder Agavendicksaft, das bleibt jeden selbst überlassen.
Mandelmilch
Für 1 Liter Mandelmilch.
Folgende Zutaten werden benötigt:
♥1 Liter kaltes Wasser
♥200g ganze Mandeln
♥30ml Agavendicksaft
♥etwas Vanillemark
Außerdem:
♥Pürierstab
Zubereitung:
Den Filtereinsatz in den Behälter stecken. Das kalte Wasser in den Behälter gießen. Die Mandeln in den Behälter geben und diese im Wasser 10 Minuten durchziehen lassen.
Agavendicksaft und Vanillemark mit hinzugeben und alles gut durchpürieren, bis die Mandeln zerkleinert sind. Die Mandelmilch für 10 Minuten durchziehen lassen.
Den Filtereinsatz vorsichtig anheben und mit dem Stößel die Flüssigkeit, die sich in den Mandeln gefangen hat, herausdrücken.
Wer mag kann sich gleich ein Glas Milch eingießen. Im Kühlschrank ist sie 2-3 Tage genießbar. Eingefroren hält sie sich bis zu 6 Monate.

Der Mandelrest aus dem Filtereinsatz lässt sich prima beim Backen verwenden. Ich gebe sie auf ein Backpapier, streiche sie gleichmäßig glatt und lasse sie trocknen.
Übrigens nehme ich den Behälter auch für mein Fruchtwasser. Dafür benötigt man nur 1 Liter kaltes Wasser und Früchte der Wahl, Ich bevorzuge es mit ein paar Zitronenscheiben. Kurz durchziehen lassen und kalt genießen.
Gerne ersetze ich die Kuhmilch im Rezept 1:1 durch Pflanzenmilch.
So auch bei meinen Milchbrötchen. Dieses Rezept enthielt ursprünglich Milch und Eier, doch Rezepte zu veganisieren ist gar nicht so schwer, wie manche von euch vielleicht glauben werden.
Vegane Milchbrötchen
Für 16 Brötchen.
Folgende Zutaten werden benötigt:
♥500g Mehl
♥1 Würfel Hefe
♥30g Zucker
♥1/2 TL Salz
♥1 Pck. Vanillezucker
♥100g Alsan, zimmerwarm
♥270g Mandelmilch
♥etwas Mandelmilch zum Bestreichen
Außerdem:
♥Backpapier
♥Backblech
♥Silikonpinsel
Zubereitung:
Milch, Zucker, Vanillezucker und die Hefe (zerbröselt) in einen Topf auf 36°C erwärmen. In die Rührschüssel gießen und Alsan und Mehl hinzugeben. Mit einen Knethaken für 3 Minuten durchkneten lassen. Den Teig für 30 Minuten abgedeckt beiseite stellen und gehen lassen.
Den Teig aus der Schüssel nehmen und nochmals mit den Händen kurz durchkneten.
In 16 Stücke teilen und diese zu längliche Brötchen formen. Die Brötchen auf das mit Backpapier belegte Backblech legen und bei 50°C Ober-/Unterhitze für 10 Minuten im Ofen gehen lassen.
Mit etwas Mandelmilch jedes Brötchen bestreichen.
Anschließend den Ofen auf 200°C aufheizen und die Brötchen für ca. 13-15 Minuten backen, bis sie goldbraun sind und herrlich duften.
