Wie schön, dass wieder Bärlauch Saison ist! Ich esse ihn zwar nicht wöchentlich, aber wenn, dann ordentlich.
Am liebsten habe ich Bärlauch mit Pasta. Dieses Gericht ist richtig schnell zubereitet und man schmeckt die Aromen des Bärlauches stark heraus. Genau richtig für Bärlauchfans.
Für die Pasta mit Bärlauch könnt ihr jede Nudel eurer Wahl verwenden. Die habe Spirelli besonders gern, da sie sehr gut die Sauce in den Rillen auffangen. Auch Spaghetti oder Penne wären optisch geeignet.
Für 4 Portionen Pasta mit Bärlauch.
Folgende Zutaten werden benötigt:
- 500g Pasta
- 60g Bärlauch
- 60g Walnüsse
- 4-5 EL Öl
- Prise Meersalz
- Prise Pfeffer
- 1 EL Hefeflocken oder Parmesanersatz
Außerdem:
Tipp: Noch etwas Zitronenschale und Saft hinzugeben, für eine noch frischere Note im Gericht!

Pasta nach Packungsanleitung zubereiten. Ein paar Esslöffel des Kochwassers aufheben. In ein Sieb abgießen, kurz abschrecken und zurück in den Topf geben.
Die Walnüsse kurz anrösten. Sie sollten aber nicht braun werden. Walnüsse und die restlichen Zutaten in ein hohes Gefäß geben. Mit dem Pürierstab pürieren, bis eine cremige Paste entstanden ist. Sollte diese zu fest sein, dann mit dem aufgehobenen Kochwasser verdünnen. Ein Schluck Öl darf auch noch gerne dazu.
Das Pesto unter die Pasta heben. Abschmecken und noch warm servieren.
Da in dem Pesto weniger Öl enthalten ist als in einem gekauften, ist es nicht so lange haltbar. Aber mindestens 3 Tage im Kühlschrank übersteht es.
