Thermomix-Thursday #102 – Mandelsahne

Ich verwende ich meinen Rezepten sehr gerne Mandelsahne. Man kann sie nicht in jedem Geschäft kaufen, auch online ist sie nicht überall erhältlich. Daher möchte ich euch zeigen wie man sie ganz einfach selber herstellen kann. Helfen tut uns dabei der Thermomix.

Letzte Woche hat Thermomix Österreich ein neues Kochbuch herausgebracht. Ein veganes mit Rezepten von Siegfried Kröpfl. Ich zeige euch ein paar Einblicke in das Buch und berichte, wie es mir gefällt.

Mandelsahne (vegan)

Mandelsahne ist eine pflanzliche Alternative zur Sahne aus Kuhmilch. Man Kann sie für Desserts verwenden, aber auch zum Binden und Verfeinern von Saucen und Suppen. 

Für 1 Glas.
Folgende Zutaten werden benötigt:
200 g Mandeln, geschält
300 g Mandelmilch
40 g Mandelöl

Außerdem:
Steriles Gefäß/ Schraubglas

Zubereitung:

Die Mandeln und 100 g Mandelmilch in den Mixtopf geben. Für 10 Sekunden /-/ auf Stufe 10 zerkleinern. Mit dem Spatel die Masse nach unten schieben.

Die restliche Mandelmilch hinzugeben. Für 1 Minuten /-/ auf Stufe 10 vermengen lassen.

Das Mandelöl hinzugeben und nochmals für 1 Minute /-/ auf Stufe 10 vermengen.
In ein Gefäß oder Glas umfüllen.

Für 3-5 Tage im Kühlschrank gelagert haltbar.
Im Kühlschrank dickt die Mandelsahne noch etwas mehr an.

Es ist das erste vegane Kochbuch von Thermomix, in Zusammenarbeit mit dem Haubenkoch Siegfried Kröpf, welches erschienen ist. In dem Buch finden sich Basic-Rezepte aber auch bekannte österreichische Kost, die ins Vegane umstrukturiert wurden.

Das Buch ist in folgende Kategorien unterteilt:

Auf den ersten Seiten findet man Wissenswertes über Herrn Kröpfl. Wie sein Werdegang war und wie er zur veganen Küche gekommen ist. Wichtige Fragen, welche eventuell zur veganen Küche aufkommen könnten, werden schon auf den ersten 17 Seiten gut erklärt. So ist das Buch auch sehr zugänglich und geeignet für Personen, die noch nicht oft vegan gekocht haben oder sich noch etwas unsicher in der veganen Küche fühlen.

Die Rezepte sind verständlich geschrieben, mit Schritt-für-Schritt Anleitungen versehen und auch Tipps sind aufgelistet. Auf den Rezepten liegt außerdem, wenn man sich an die Angaben hält, die Gelinggarantie von Thermomix drauf. Da kann fast schon nicht mehr schiefgehen beim Kochen und Backen.

Demnächst wird es zum Buch auch den Rezept-Chip geben. Auch Cook Key -Besitzern wird es bald zur Verfügung stehen.

Ich werde mich ganz bestimmt durchs Buch kochen. Ich mag die österreichischen Schmankerl und die Vielzahl an unterschiedlichen Rezepten. Wer vegan isst oder gerne Neues ausprobiert, der sollte unbedingt mal ein Auge in das Buch werfen. Langzeit-Veganern könnten einige Rezepte schon kennen, aber auch diese werden das Ein oder Andere neue Rezept aufgreifen können. Schöne Gestaltung, angenehm durchzublättern und die ansprechenden Fotos bereiten großen Gusta.
