Bratensaucen braucht man immer mal. Wir lieben sie zu Linsenbraten oder diesen Bohnen-Pattys! Egal ob Reis, Kartoffel oder Nudeln dazu. Lange Zeit empfand ich es als schwierig eine vegane Bratensauce zubereiten zu können, die sich mit einer „richtigen“ Bratensauce messen kann. Aber nach 10 Jahren, die ich viel bis ausschließlich vegan koche und backe, gelang es mir irgendwann.
Damit ihr nicht jahrelang forschen und probieren müsst, verrate ich euch mein Bratensaucen Grundrezept. Ihr könnt es je nach Belieben anpassen und verfeinern. Mit Hafersahne, Kräutern, Oliven oder Pfefferkörner drin…ganz egal wie, ihr werdet sie lieben und pur löffeln wollen! 😀
Für 6 Portionen.
Folgende Zutaten werden benötigt:
- 2 Karotten
- 1 Zwiebel
- 4-6 Knoblauchzehen
- 100g Champions, braune
- 2-3 EL Öl
- 200-300 ml Rotwein (bei mir alkoholfrei)
- circa 400 ml Wasser
- 1 EL Agavendicksaft
- 1 EL Balsamico Creme
- etwas Thymian, getrocknet
- 1 EL Senf
- 1 EL Sojasauce
- Salz & Pfeffer
- 1 EL Tomatenmark
Außerdem:
- Pürierstab
- eventuell Wasser zum Verdünnen der Sauce

Karotten, Zwiebel, Knoblauchzehen und Champions säubern, vorbereiten und fein hacken. Je feiner, desto besser.
Mit etwas Öl in eine Pfanne geben und andünsten. Circa 3 Minuten.
Alle restlichen Zutaten hinzugeben, aufkochen lassen und 20 Minuten schwach köcheln lassen. Regelmäßig umrühren!
Mit einem Pürierstab pürieren, bis die Konsistenz gefällt. Wasser oder auch Wein kann zum Verdünnen hinzugegeben werden. Abschmecken und eventuell nachwürzen.
Weiterverarbeiten oder servieren!
Im Kühlschrank ist die Bratensauce ohne Braten 3 Tage haltbar. Eingefroren hält sie sich bis zu 3 Monate.
